Monday: Sheet-Pan Lemon Garlic Chicken & Veggies

Prep: 10 min | Cook: 20 min | Serves: 4

Ingredients

  • 4 boneless, skinless chicken thighs (or breasts)
  • 2 cups broccoli florets
  • 1 cup baby carrots, halved lengthwise
  • 1 red bell pepper, sliced
  • 3 tbsp olive oil, divided
  • 3 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C). Line a large sheet pan with parchment paper.
  2. Whisk together 2 tbsp olive oil, garlic, lemon zest, lemon juice, oregano, paprika, salt, and pepper.
  3. Place chicken on one side of the pan and vegetables on the other. Drizzle everything with the remaining olive oil, then pour the lemon-garlic mixture over the chicken and toss the vegetables to coat.
  4. Roast 18–20 minutes, until chicken reaches 165°F (74°C) internally and vegetables are tender.
  5. Rest 3 minutes, then serve.

Mom tip: Double the chicken and save half for tomorrow's lunch salads.


Tuesday: 15-Minute Garlic Butter Shrimp with Rice & Asparagus

Prep: 5 min | Cook: 10 min | Serves: 4

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 1 bunch asparagus, trimmed, cut into 2-inch pieces
  • 1 tbsp lemon juice
  • 1/4 tsp red pepper flakes (optional)
  • 2 cups cooked rice (a 90-second microwave rice pouch keeps this truly 15 minutes)
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Start your rice first if cooking on the stovetop, so it's ready when the shrimp is done.
  2. Melt butter in a large skillet over medium heat. Add asparagus and cook 4 minutes, stirring occasionally.
  3. Push asparagus to one side; add shrimp and garlic to the other. Cook 2–3 minutes per side until shrimp is pink and opaque.
  4. Stir in lemon juice and red pepper flakes. Season with salt and pepper.
  5. Serve over rice, garnished with parsley.

Mom tip: Keep a bag of frozen peeled shrimp on hand — this becomes a true 15-minute meal with zero prep. We use frozen shrimp / seafood for this.


Wednesday: One-Skillet Turkey Taco Rice Bowl

Ingredients

  • 1 lb ground turkey
  • 1 small onion, diced
  • 1 tbsp taco seasoning (or 1 tsp each chili powder, cumin, paprika, garlic powder)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup uncooked rice
  • 1.5 cups chicken or vegetable broth
  • Toppings: shredded cheese, avocado, cilantro, lime wedges

Instructions

  1. Cook ground turkey and onion in a large skillet over medium heat until browned, about 5–6 minutes. Drain excess fat.
  2. Stir in taco seasoning, black beans, corn, diced tomatoes, rice, and broth.
  3. Bring to a boil, then reduce heat, cover, and simmer 15–18 minutes, until rice is tender and liquid is absorbed.
  4. Fluff with a fork and top with cheese, avocado, cilantro, and a squeeze of lime.

Thursday: Sheet-Pan Salmon with Roasted Broccoli & Sweet Potato

Ingredients

  • 4 salmon fillets (about 5–6 oz each)
  • 2 medium sweet potatoes, cubed
  • 2 cups broccoli florets
  • 3 tbsp olive oil, divided
  • 2 cloves garlic, minced
  • 1 tsp honey
  • 1 tbsp soy sauce (or coconut aminos)
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Toss sweet potato cubes with 1 tbsp olive oil, salt, and pepper on a sheet pan. Roast 10 minutes first — they take longer than the salmon.
  2. Meanwhile, whisk together remaining olive oil, garlic, honey, and soy sauce.
  3. Push sweet potatoes to one side; add broccoli and salmon to the pan. Brush salmon with the honey-garlic glaze and season broccoli with garlic powder, salt, and pepper.
  4. Roast another 12–15 minutes, until salmon flakes easily and vegetables are tender.

Mom tip: No sweet potato on hand? Regular potatoes or pre-cut butternut squash work just as well.


Friday: 20-Minute Black Bean & Veggie Quesadillas

Prep: 10 min | Cook: 10 min | Serves: 4

Ingredients

  • 8 small flour or whole wheat tortillas
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup shredded Mexican-blend cheese
  • 1 bell pepper, diced
  • 1/2 cup corn
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • 2 tbsp olive oil, for the pan
  • Sour cream and salsa, for serving

Instructions

  1. Lightly mash black beans with cumin and chili powder, leaving some beans whole for texture.
  2. Layer 4 tortillas with bean mixture, cheese, bell pepper, and corn, then top with the remaining 4 tortillas.
  3. Heat a lightly oiled skillet or griddle over medium heat. Cook each quesadilla 2–3 minutes per side, until golden and the cheese is melted.
