In a January 2024 episode of her talk show, Clarkson disclosed that she had been diagnosed as prediabetic. "I wasn’t entirely surprised," she admitted. "I was slightly overweight, and they informed me I was on the cusp of prediabetes."

The Plant Paradox Diet is a lectin-free diet that eliminates beans, legumes, whole grains, certain vegetables, and dairy. “I read this book and did it for my autoimmune disease and thyroid issue, and now all my levels are back up,” she said. “I’m not on medicine anymore because of this book. It’s about how we cook our food, non-GMO, no pesticides, eating really organic. I haven’t worked out at all!”
